this winter with Mom, we enjoyed a beautiful sunny afternoon to go for a stroll at the Christmas market. I stopped at a booth selling flavored honeys very original. And I cracked in particular their " Delights honey hazelnut " ( made the traditional way by assembling a light and creamy honey with fruit and nuts reduced form of paste . ) For those interested, their site is HERE ( I said that this link is not sponsored! ) So obviously when I saw this recipe for Honey Financial in the book by Martha Stewart, I told myself that the use of this honey with a delicate nutty flavor been more appropriate.
Besides being really cute, these little financial really very good! Soft and melting , they are a pleasure greedy, good and healthy to times since prepared with quality ingredients. The fine taste and soft texture make this pastry ideal taste to accompany tea and coffee. 25 g melted butter hazel
25 g of sweet honey ( ideally a honey or hazelnut Almond )
35 g of finely ground roasted almonds & ( or 35 g ground roasted almonds 2 x 1 min in the microwave )
20 g sugar
5 g sugar
15 g flour ( t ype 45)
1 / 2 c salt mocha a pinch of Fleur de Sel
1 large egg white (40 g )
30 g of fresh raspberries mixed and sifted few drops of red fruit coulis

Preheat oven to 180 °
Place butter melt over low heat until he got a pretty hazel . Add honey. Mix with a whisk. Remove from heat.
Put roasted almond powder, sugar, flour and salt in a bowl. Add egg white and mix vigorously. Add the honey mixture into the net. Foutter strongly that the dough is homogeneous.
Pour into small paper boxes and fill them 2 / 3 ( count 1 tbsp per cell ). Pour 2-3 drops of red fruit coulis ( or other flavors of your choice: raspberry, strawberry, currant ... ) so as to obtain a line slightly near the edge. Place a toothpick in the middle of the grout line and pull the financial center to form the apex of the heart.
Bake 15-20 minutes until edges are golden .
Cool before removing from pan gently.
The taste still warm they will be better!
Store in an airtight container and eat within 3 days .
