Sugar Cookies (Martha Stewart # 18)


A very crusty top layer that hides a heart much moist and tender.
The touch of lemon makes a pleasant acidic note .
Small cookies that taste like a sweet childhood .
They are delicious with a glass of milk.

25 g brown sugar
175 g sugar
115 g of butter at room t °
1 egg ( large caliber )
1 teaspoon lemon juice
grated zest of 1 lemon
1 / 2 teaspoon baking soda
1 / 4 tsp salt 1 pinch sel
210 g flour ( type 45 )
QS granulated sugar for sprinkling


Preheat oven to 180 °
the robot Cream sugars, butter and zest lemon on medium speed.
Beat in egg and lemon juice. Add
gradually flour, baking soda, vanilla and salt.
Take balls of dough and place on a baking sheet lined with parchment paper
spacing them well because they spread much cooking . Flatten slightly and sprinkle a little granulated sugar . Brush them lightly with a wet brush and sprinkle with granulated sugar again . This double layer of granulated sugar which allows the formation of a layer of crunchy and slightly shiny .
Bake 15 min until browned .
Let stand 5 minutes before take off and let cool completely on rack.
Store in a box sealed and use within 3 days .
